Raspberry Chipotle Pork Tenderloin & Roasted Potatoes

Meat and potatoes? Done deal. There’s not a lot you can do to mess this meal up, with the exception of overcooking the pork. Which, is usually pretty easy to do because it cooks so fast. Good news though, tossing this entire meal in the oven guarantees lots of flavor and a quick prep time. I seriously don’t know how people bitch so much about not having time to cook dinner for themselves or their families; I literally tossed this meal together a good 5 minutes before the oven was even done preheating.

This meal was fabulous. It was hearty without being too much (think the lighter version of steak and mashed potatoes). The pork was juicy and the potatoes golden. The raspberry chipotle sauce gave just the right kick and interest, and to be frank…I will definitely make this again.
