Pizza. Need I Say More?

If I could eat just one meal for the rest of my life it would probably be pizza. You can pretty much put anything you want on it and it is guaranteed delicious. As for me, I’m usually a pretty simple girl, give me cheese and pepperoni and I’m happy.
A few nights ago we wanted to get out of the house and had no idea where we were headed but we knew we were hungry. We ended up in Encinitas, and after cruising through town a few times, Jason suggested we try Manhattan Giant, a little pizza joint on D Street. For the record, I have suggested we try this pizza place I don’t know how many times, and every time Jason has some excuse. This time, he was especially cynical, uttering the words, “Prepare for disappointment,” as we got out of the car. I just laughed at him, somehow knowing it was going to be good. I had a feeling.
And it was. The best pizza. We have ever had.
Just so you know, that’s saying a lot. We are pizza people. Do I have to explain the silly, embarrassing story of how we met working at Domino’s? I was hoping not. Anyway, this pizza had it all. The crust had the right yeasty, sweetness, and just the right crunch. The kind where the bottom crinkles, but is soft and doughy on top. The sauce had just the right tang and spice, the cheese just enough elasticity, and the pepperoni just enough grease. I’m salivating just thinking about it.
To top it all off, Manhattan Giant is owned by Eddie (is that not perfect?) who has been there for 15 years. And in case you were planning a huge party for way too many people they have the world’s largest commercial pie. It comes in at like 36″ and it’s pretty insane. Speaking of insane, there are endless topping opportunities, including feta cheese and meatballs. Not sure that I’d recommend the two together, but I’m just sayin’.

Really, I think the only thing left for you to know is that we ate the whole thing. Two people with nothing but napkins. And apparently, just the right amount of food to get us home. Yes, we ate it in the car. Who waits until you get home?
